‘Familiar Routes: Lake Baikal and the Pacific Ocean’
The Kyoto restaurant hosted a gastronomic dinner as part of the "Native Routes" project, bringing together Irkutsk and Vladivostok, Lake Baikal and the Pacific Ocean.
The evening's main protagonists were brand chef Pyotr Birkin of the ULYSSES Asia restaurant and brand chef Mikhail Gulyaev of the Kyoto restaurant. Together they created a special menu at the intersection of the two regions — their produce, culinary traditions, and personal perspectives on contemporary Asian cuisine.
Each course revealed its own part of the journey — from the flavors and imagery of the Pacific coast to the local produce of the Baikal region. Through the dishes, the chefs' stories, and unexpected combinations, guests were able to see just how close two regions separated by thousands of kilometers can be.
The dinner became a continuation of a gastronomic journey, in which ideas are born not only in the kitchen, but also on the road, at markets, by the water, and while getting acquainted with the culture of a new city.
This evening brought together gastronomy, travel, and a lively dialogue between two chefs, turning the dinner into a route from the shores of the Pacific Ocean to Lake Baikal.
